Like many TikTok trends, the pesto egg falls under FoodTok, the platform’s resident foodie community. Amy Wilichowski, a registered dietitian, first posted her viral TikTok on April 26, 2021, and currently has 11 million views and 1.4 million likes. Wilichowski demonstrates her process by creating avocado toast with sourdough bread, ricotta cheese, smashed avocado, her special egg fried in pesto and topped off with honey and red chili flakes.
The only difference in Wilichowski’s recipe is to cook the eggs in a spoonful of pesto instead of in oil or butter. Once the pesto spreads and melts, add in the eggs to soak up the pesto flavor. Although it’s simple, the pesto egg is a level up and can be used on avocado toast or even in breakfast sandwiches, as Wilichowski shows in another TikTok. Instead of toast, Wilichowski plops her eggs on an English muffin with bacon and sliced avocado.
The #pestoeggs tag currently has 123.5 million views and is filled with videos of other TikTokers taking their own spin on the original. In an article by Kaley Rohlinger on Popsugar, Rohlinger states that the “beauty of this recipe is that you can cook the eggs any way you like: scrambled, fried, sunny side up,” reflecting the creativity of the TikTok hashtag.
One user @darnitdamon, took the trend in a different direction in his TikTok. After trying the eggs on bread, Damon proceeded to take an Asian spin on the recipe by placing the eggs on top of roti, a type of Indian bread, cheese, and chili oil.
Danielle Keith, @healthygirlkitchen on TikTok, created a vegan version of the pesto eggs. Instead of eggs, Keith uses circle-shaped tofu and turmeric to represent the yoke. She then follows the original process and coats the tofu in pesto, and then places the final creation on her toast.
Another account, @food52, reviewed whether the pesto eggs are “just a trend or do it again.” By recreating the original avocado toast recipe that Wilichowski posted, @food52 states that the final verdict is to do it again, the recipe actually worth trying
A version of the pesto eggs that stands out is created by @thisisplanetfood. They created a pesto egg breakfast burger in their TikTok, starting off with red pesto in a pan and adding egg, halloumi cheese, and bacon, all finally being placed between burger buns.
So, egg lovers can rejoice. These recipes aren’t crazy difficult — anyone can make these eggs with a few simple, cheap ingredients. With endless variations, it’s easy to personalize. It’s clear that TikTok has been a creative outlet for experienced chefs and young people who are just getting started with their cooking journey.
It’s safe to say that TikTok’s future won’t just continue to be viral dances and popular sounds. FoodTok, along with other niche TikTok communities, will continue to expand the app’s reach and appeal to a variety of audiences — both young and old.
